The Cake & Muffin Blend loves to be made with any kind of oil or butter. Remember that oil based cakes are traditionally lighter than butter based cakes and the same rules apply for this flour blend. From classic sponge cakes (genoise) to chocolate mayonnaise cakes, you're a success waiting to happen. For muffins, my favorites are the ones with fruit or vegetables added for that really sublime nutritional boost and incredible mouth feel.
