Here is a quick list of our most frequently asked questions:

1.  Can I use Blackbird Bakery Flour Blends to replace regular all-purpose (AP) flour 1:1?

This is by far our most popular question and the answer is YES YOU CAN. The ingredients we use do weigh less, however, so we strongly encourage every customer to weigh out 120g. of our flour for every cup of AP flour you are replacing.

2.  What is the self life of your flour blends?  

From the day the flour blends are packaged, they have a shelf life of 1 year (365 days).

3.  Do I need to refrigerate the flour blends?

No, refrigeration is not required, however, if you live in a southern state, we do recommend refrigerating the Bread & Pizza Blend in the summer months.   The Bread & Pizza Blend has a high ratio of sorghum and millet, which can go rancid if exposed to extreme temperatures for long periods of time.   

4.  Can I use the flour blends to make any recipe I want? 

YES.  I did all the hard work so you don't have to.  You can use Blackbird Bakery Flour Blends to make any recipe you find in a magazine, online, in a book or in your head.  I strongly recommend that you use the right blend for the appropriate recipe.  So, you'd use the Donut Fritter Blend to make fried chicken, not the Pie & Pasta Blend.

5.  Do I need to refrigerate any of the doughs overnight? 

This is an absolute MUST for drop cookie recipes, tart dough, and for bread starters.  Drop cookies need the resting time overnight so the sugars can absorb the liquids and give you that ever so tender texture.  The tart dough needs to rest overnight so the dough is the perfect consistency for rolling out, and all dough starters need time to develop their flavors (gluten-free or not).
